This Picnic is a Picnic to Make

I have always loved the idea of a picnic. Packing a picnic basket, complete with a cute blanket is right up my alley. But growing up in the city, picnicking was a rarity. The few times we did picnic, there was no elaborate basket and no coordinating blanket. Instead, we spread out a random beach blanket from our closet and snacked straight from the grocery bag.

Sadly, I still don’t have an extravagant picnic basket, mostly because my studio apartment doesn’t have the space for such an item. However, I can still get behind a meal meant to travel and easy to eat while sprawled on a patch of grass. 

This breakfast to-go is great for a picnic, a grab and go set up or just breakfast in general. When making egg sandwiches for guests, I like to create a “build your own” set up. I assemble an egg with cheese on a biscuit and provide sauces, like spicy mayo, and add-ons like bacon and avocado. My trick to making egg sandwiches for a crowd is to bake the eggs in a muffin tin. It’s an easy way to make a bunch of eggs, all perfectly sized for a biscuit. Wrap each biscuit egg sandwich in parchment to a great on-the-go breakfast.

Romy, my sister, is the mastermind behind these French Toast muffins. We were brainstorming a breakfast menu, designed with travel in mind and she pitched the idea. It’s a brioche French Toast, prepared as if you were making a casserole but baked in muffin tins for an easy three bite snack. They’re delish with maple syrup.
